How to make delicious fish tacos at home for Cinco de Mayo

Cinco de Mayo falls on Taco Tuesday this year, and you can get a halibut taco kit and follow this cooking lesson from a Zupan's chef.

PORTLAND, Ore. — It's time for Cinco de Mayo! The holiday falls on a Tuesday this year, which, for many people, means it's Taco Tuesday.

But if you need some inspiration for this year's socially-distant fiesta, here's an easy way to make a great dinner.

Zupan's Markets are selling halibut taco meal kits, complete with fresh halibut (because it's halibut season now!), corn and wheat tortillas, guacamole, mango salsa, cilantro lime slaw, and if you really want to get in the spirit, you can add some mini Modelo beers and fiesta-themed cookies.

Important fact: you have to order your kit by noon on Cinco de Mayo, and then you can grab it via curbside pickup between 3 and 7 p.m. Order here.

Once you get the kit, all you have to do is cook the halibut, and then assemble your tacos.

The whole process will take you less than a half hour, and it's easy. So easy that even I could do it - while on a Zoom call with John, the Zupan's Market chef.
