1 yellow onion
6 oz. mushrooms
1 celery stick
1 lb. stew beef
1 beef bouillon cube
1 cup flour
1 T olive oil
1 T cracked black pepper
1 t ground coriander
2 bay leaves (or 3 dried chipotles)
(At least) 2 cans of High Life
Heat olive oil in skillet over medium heat.
Put beef into a large, lidded bowl or gallon-size bag. Add flour, pepper, and coriander and shake until meat is coated.
Brown beef in skillet and dump into Crock Pot
Add vegetables (coarsely chopped) on top of beef. Stick bouillon and bay leaves (or chipotles) in there somewhere.
Pour High Life over everything until it’s just below the top of the other ingredients.
Cook on high for three hours or low for six hours.
Remove bay leaves (or chipotles) before eating.
