Insalata Caprese with Pesto Vinaigrette

1/4 cup Buitoni Refrigerated Pesto with Basil

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

3 vine-ripened tomatoes

8 ounces fresh mozzarella cheese

1 tablespoon fresh basil, chopped

salt and ground black pepper

Combine pesto, oil and vinegar in small bowl; set aside.

Slice tomatoes and cheese into 1/4" thick slices. Layer or stack tomatoes and cheese on a serving platter. Drizzle pesto dressing over top. Garnish with fresh basil and season with salt and pepper.

Tortellini with Pesto and Asparagus

2 packages Buitoni Refrigerated 3-Cheese Tortellini, 9 ounces each

2 tablespoons olive oil

1 pound asparagus spears, trimmed and cut into 2" pieces

1/2 cup Buitoni Refrigerated Pesto with Basil

1/2 cup Parmesan cheese, freshly shredded

Prepare pasta according to package directions. Meanwhile, heat olive oil in skillet. Add asparagus and sauté for 3–4 minutes, until softened and bright green.

Drain pasta. Toss with pesto, cheese and asparagus.

Tortellini Alfredo with Crab and Artichokes

1 package Buitoni Refrigerated 3-Cheese Tortellini, 9 ounces

1 container Buitoni Refrigerated Alfredo Sauce

1 can artichoke hearts, drained and halved, 6.5 ounces

1/2 pound crabmeat, cooked

1/8 teaspoon ground black pepper

Parmesan cheese, freshly shredded

1 Prepare pasta according to package directions.

2 Heat alfredo sauce and artichokes in medium saucepan over medium-high heat until heated through. Add pasta, crabmeat and pepper; cook, stirring occasionally, for 1 minute. Sprinkle with cheese.
