FRESH BBQ COOKOUT SIDE DISH IDEAS WITH LEIGH ANN

Honey-Citrus Fruit Salad

Ingredients

1/3 Cup Honey
2 Limes
1/2 Papaya, cubed
1/2 Cup Pineapple
2 Bananas, sliced
2 Apples, cubed
1/2 Cantaloupe, cubed

Instruction
Heat honey for 10 seconds in microwave. Zest the limes, then juice them, removing the
seeds.

Whisk the lime juice and half the zest into the honey. Place all fruit in a large glass bowl.
Toss gently with honey/lime mixture. Chill until ready to serve.

Top with remaining lime zest and serve.


Broccoli Slaw

Ingredients
1 Package Jarlsberg Cheese, sliced, 6 oz.
1 Medium Red Bell Pepper
3 Tablespoons Olive Oil
3 Tablespoons Red Wine Vinegar
1 Teaspoon Dry Mustard
1 Teaspoon Sea Salt
1/2 Teaspoon Caraway Seeds
1/4 Teaspoon Freshly Ground Black Pepper
1 Package Brocolli Cole Slaw, 16 oz., or cabbage mix for coleslaw

Instruction
Cut Jarlsberg cheese into thin, bite-size strips. Thinly slice red pepper.

In medium bowl, whisk together olive oil, vinegar, mustard, salt, caraway seeds, and black
pepper.

Add broccoli coleslaw, cheese strips, and red pepper. Toss gently to coat.


Chilled Penne & Blue Cheese Salad


Ingredients

1 Package Penne Pasta, 16 oz.
1/2 Cup Walnuts, halves and pieces
1 Cup Marie's Yogurt Blue Cheese Dressing
Freshly Ground Black Pepper
1 Pint Cherry Tomatoes, halved
1/2 Cup Fresh Flat Leaf Parsley, chopped

Instruction
prepare penne pasta as directed. Drain. Place in a bowl and chill.

Heat skillet over medium heat. Add walnuts and toast until lightly browned; remove.

Toss with Marie's Yogurt Blue Cheese dressing, cherry tomatoes and cracked pepper. Just
before serving, toss with walnuts and parsley.


Roasted Garlic and Bacon Guacamole Burger

Ingredients

3 Avocados, ripe, peeled, seeded
1/2 Teaspoon Ground Cumin
1/3 Cup Green Onion, diced
2 Cloves Garlic, roasted
1/4 Cup Cilantro, chopped
2 Tablespoons Lime Juice, fresh
3 Strips Bacon, cooked and crumbled
Sea Salt, to taste
Freshly Ground Black Pepper, to taste

Instruction

Remove outer peel of garlic. Slice 1/2" of the top of garlic so that tops of garlic show. Place
in aluminum foil. Drizzle with olive oil, salt and pepper. Close foil and place on grill for
about 30 minutes.

Cut avocados into large chunks. Mash coarsely with fork in large bowl. Add remaining
ingredients and blend gently.

Serve on top of a hamburger or with tortilla chips.
