
Spirit Mountain Casino’s Mountain View Thai Chicken Skewers
Chicken
4 each 8 oz chicken breast
long bamboo skewers
season salt to taste
Thai Peanut Sauce
2½ cups creamy peanut butter
1 oz sambal chile paste
1 each lime juice
½ cup oz Kikoman soy sauce
4 oz sugar (2 lbs.)
2 oz water (1 qt)
1 tsp oz ginger paste (1 cup)
Combine all of the above with a blender.
Signature Asian Slaw
• 4 cups prepared cole slaw mix w/ shredded carrots & red cabbage
• 1 cup bean sprouts
• ½ cup Litehouse fat free sesame ginger dressing
Mix all the above
Garnish
• Romaine leaf
• Cherry peppers
Black sesame seeds
Method:
Cut a 6 oz chicken breast into 8 pieces to make 2 skewers (4 each).
Grill skewers till done basting with 2 oz of Thai peanut sauce.
Microwave 3 oz of sauce and transfer to a 4 oz soufflé cup.
Arrange skewers on a romaine lettuce leaf and garnish as pictured.
