Mountain View Flash Fried Calamari Salad

Mountain View Flash Fried Calamari Salad

Breading for Calamari:
•    3 cups seasoned flour breading EXAMPLE: Dixie Fryä
•    1  tsp coarse black pepper

Toss spinach with sesame ginger dressing and portion onto each plate with a romaine leaf as pictured. Bread 1.5 lbs calamari tubes and tentacles. May be purchased frozen (thaw before breading); Shake off excess breading with a colander.  Fry in large pan with ½ inch oil for approximately 20 seconds. Portion fried calamari on salads. Add matchstick carrots and Mandarin oranges as a garnish

Salad & Garnish:
•    2 lbs fresh stem less spinach
•    1 cup matchstick carrots
•    ¼ cup Mandarin oranges
•    4 oz. Litehouseä fat free sesame ginger dressing

Garnish:
•    romaine leaf
•    lemon wedges
•    2 oz wasabi aioli

Signature Wasabi Aioli

•    2 tbsp wasabi powder   
•    3 tbsp water
•    1 each lemons and zest use juiced and fine chop zest
•    1 tbsp bunch parsley fine chopped
•    1 tbsp rice wine vinegar
•    1 tbsp Dijon mustard
•    3 cups mayo
•    Salt to taste
•    White pepper to taste

Mix wasabi powder with water to form a paste. Zest lemons and fine chop, add juice lemons removing any seeds. Add Dijon mustard, vinegar, salt and pepper. Add mayo, chopped parsley and water to thin down if necessary.
