Spirit Mountain Casino’s Cedar Plank Buffet BBQ Pork Ribs & Smoked Beef Ribs

Recipe:

BBQ Pork Rub for Ribs

½ c    White sugar
2 T    Paprika, smoked
½ c    Kosher salt
1 T    Black pepper
1 t    Cayenne pepper
1 t     White pepper
2 T    Garlic powder
1 T    Onion powder
2 Pkt.    Spiced Apple Cider (1.5 oz.)
1 T    Caribbean Spice   
    Smoked Beef Rib Rub

Smoked Beef Rib Rub

½ c    White sugar
2 T    Paprika
½ c    Kosher salt
1 t    Black pepper
1 t    Cayenne pepper
1 t     White pepper
2 oz    Garlic, granulated
1 t    Onion powder
1 T    Mustard, dry, English
1 t    Chilies, red, crushed
1 t    Thyme, whole
1 t    Cumin
1 t    Chili powder

Combine all ingredients and mix well. Generously coat meat with seasoning and refrigerate overnight or up to 24 hours. Place in smoker -

Pork    *2 hours at 200°
Beef    *2 hours at 225°

*Smokers vary, so adjust time as you needed for your smoker.
Ribs may also be BBQ’d or oven roasted to your liking.
Serve with your special recipe baked beans, corn on the cob, and coleslaw. Sauce as desired.
