Gluten Free Granola

Ingredients:
1 cup each: chopped walnuts, pecans, almonds, cashews, hazelnuts (some or
all)
1 cup chopped pumpkin or sunflower seeds (or both)
3 tablespoons flaxseed finely ground
2 cups unsweetened coconut
3 cups Rice crisps (puffed rice) optional
1/2 cups sesame seeds
1/4 cup honey
1/2 cup coconut butter or safflower oil
2 teaspoons vanilla
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon nutmeg
Preheat oven to 275º Mix dry ingredients in a large bowl Heat wet ingredients until mixed and melted.
If using coconut butter you will ned to put warmed wet ingredients in a blender. Mix wet ingredients with dry and spread on a large baking pan - NO GREASING
Bake 1 1/2 hour, and stir every 30 minutes. Serve as a snack, its great with yogurt or with coconut milk
