Sauteed Prawns with Garlic

Sauteed prawns with garlic

Ingredients:
6 prawns, 16/20 size
¼cup white onion, in quarter-inch slices
2 tablespoons Spanish olive oil
1 teaspoon minced garlic
1 ounce Sherry
¼cup chicken stock
½teaspoon red chili flakes
1 tablespoon butter
1 tablespoon diagonal green onions
Salt to taste

 

Procedure:
1. Warm the olive oil in a sauté pan. Add the onion and garlic and sauté until the onions begin to soften.
2. Add the prawns and sauté for 30 seconds.
3. Deglaze the pan with the sherry, then add the chicken stock and red chili flakes.
4. When the liquid reduces, mount in the butter and season with salt.
5. Garnish with green onions and serve.
